For this dish, ALL
THE INGREDIENTS CAN BE BOUGHT IN THE VILLAGE - from the suppliers
.. and that includes the Bees
HEREFORD CIDER AND HONEY GAMMON
1.4-1.8kg / 3 to 4lb Gammon joint
Cider to bind (.. Just a quick slurp .. for 'quality-control' ..)
125g / 4oz Brown Breadcrumbs
Water (? .. oh yes, to boil with ..)
2 tablespoons Brown Sugar
2 tablespoons Honey
300ml / ½ pt Special Reserve Medium Sweet (!) Cider *
Oven temperature 190°C/375°F/Gas
Mark 5.
Cover the gammon with water and
boil for 1 hour.
Remove from the water and peel away the skin.
Mix the breadcrumbs and sugar and bind with cider.
Press this mixture onto sides of gammon firmly.
Place in casserole or shallow dish and pour in mixture of cider and
honey.
Bake for about 1¼ hours, basting from time to time.
Don't forget to serve the same
cider to drink with the meal.. .. ..
And plenty of time to sleep
it off .. afterwards !
